A typical masculine dish: stewed ribs in their own juice. A quick recipe for a tasty and delicious dish for any hungry guy. Braised ribs are one of those foods that we think about when we’re hungry. That sauce, that softness of the meat and that perfect smell make your mouth water.
Makes 4 servings
1 kg fresh ribs
salt and pepper to taste
1 small teaspoon ground sweet paprika
pinch of ground hot pepper
1/4 cup flour
2 tablespoons vegetable oil or lard
1 medium onion
1 medium garlic clove
2 medium carrots
1 small celery or 1 sweet potato
2 tbsp soy sauce
3 – 4 cups water
Method of preparation
Wash the ribs thoroughly and divide them into pieces with one cube. Season to taste with salt and pepper. In a medium bowl, combine the flour with the ground paprika, add the ribs and coat them thoroughly.
Heat a wide, large pot over moderate heat, pour in 1.5 tablespoons of oil or lard, spread it over the entire bottom. Put the ribs into the hot fat and brown thoroughly, twisting from time to time (about 8 minutes)
Remove the seared ribs to a plate to cool slightly.
Pour the remaining 0.5 tablespoon of oil or lard into a pot, add the diced onion and garlic. Fry slowly, stirring for approx. 4 minutes. Add the peeled and diced carrots, parsley and celery. Season with salt and pepper to taste.
Place the ribs in the vegetables, pour in the soy sauce and hot water (covering everything with liquid). Cover and cook for approx. 1.5 to 2 hours until the meat is tender and almost comes off the bone on its own. Add the peeled and diced sweet potato or celery for about 100 minutes. 25 minutes before the end of cooking. The sauce can be thickened a bit by removing the lid so that the water from the sauce can evaporate
